Rice and corn cakes are amazing snacks that can be used to make more complex sweet or salty treats. Eaten alone they're a little plain, but with just a few ingredients you can really make your taste buds do a little dance!

Jazz up your ILIOS rice cakes with creative toppings!

Fruits, veggies, nuts, meat or spreads - there is no limit to what you can use to dress up your rice cake. Here are some of our FAVOURITE toppings to use with our ILIOS rice and corn cakes:






Chocolate spread and berries.

Our chocolate-covered rice cakes are only available seasonally. So if you've got a craving, satisfy it by using chocolate spread, like Nutella, and topping it off with fresh berries. Sprinkle some chia seeds on top for a nutritious boost.








Cream cheese and smoked salmon.

In love with bagels and lox but not so in love with all the carbs? We have the perfect solution! Top your rice cake with cream cheese, smoked salmon and a sliver of cucumber for a little CRUNCH!









Cottage cheese and jam.

For another BERRY delicious snack, spread cottage cheese onto your rice cake and top with strawberry jam. Sprinkle some nuts on top for protein and some coconut shavings for a little tropical touch.







Nut butter and bananas.

The perfect breakfast does exist! Put a spin on your everyday peanut butter sandwich and top you rice cake with peanut butter (or, our favourite, almond butter!) and sliced bananas. Feeling a little naughty? Drizzle melted chocolate over it! YUM!

ILIOS BAKED FETA PASTA

ILIOS Baked Feta Pasta

This recipe went viral on TikTok recently and it's easy to see why. Using ILIOS feta and organic pasta, we made this super simple and delicious dish in a few easy steps:


Ingredients:

  • 1 block of ILIOS feta cheese

  • 1 - 1 1/2 cups of halved (or quartered) cherry tomatoes

  • 2 cloves of garlic (minced)

  • 1 onion (diced)

  • Herbs (rosemary, thyme, oregano, parsley, basil) to taste

  • 2 cups of cooked ILIOS pasta

  • 2 tbsp. of reserved pasta water


Recipe:

  1. Add your cherry tomatoes, garlic, onion, herbs and feta to a baking dish and bake at 400° for 30-40 minutes (until the feta is golden brown).

  2. Add pre-cooked pasta and a bit of pasta water to the dish and mix everything together.

  3. DEVOUR!


CREAMY ILIOS FETA DIP


Creamy ILIOS Feta Dip

This dip is the PERFECT pairing with fresh chopped veggies to enjoy on a hot summer night! Our mouth is watering just thinking about it!


Ingredients:

  • 1 block of ILIOS feta cheese

  • 1/2 cup sour cream

  • 1/2 cup ILIOS mayonnaise

  • Zest from 1 lemon

  • 1 garlic clove (chopped)

  • 1/4 tsp. dried dill

  • 1/4 tsp. dried oregano

  • 1/4 tsp. dried thyme

  • 1/8 tsp. salt

  • 1/4 tsp. freshly ground black pepper

  • 1/8 tsp. crushed red pepper flakes

  • 1 tsp ILIOS extra virgin olive oil


Recipe:

  1. Combine all of the ingredients in a food processor or blender and process until smooth.

  2. Taste and adjust seasoning if necessary.

  3. Transfer to a serving bowl and drizzle with olive oil and sprinkle with fresh parsley.


ILIOS WATERMELON FETA SALAD


ILIOS Watermelon Feta Salad

If you have not yet tried watermelon paired with feta cheese, do yourself a favour and DO IT! The contrast between salty and sweet and the mix of soft and crunchy textures is simply divine! This is must-have salad when the summer heat is getting to you and you need to freshen up!


Ingredients:

  • 1/4 cup ILIOS extra virgin olive oil

  • 2 tbsp. red wine vinegar

  • 1/2 tsp. kosher salt

  • 3 cups seedless watermelon (cubed)

  • 1 cup cucumber (chopped)

  • 1 cup ILIOS feta (crumbled)

  • 1/2 cup red onion (diced or thinly sliced)

  • 1/2 cup mint (chopped)

Recipe:

  1. In a small bowl, whisk together olive oil, red wine vinegar, and salt.

  2. In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Pour in the dressing, toss to combine.

  3. Garnish with more mint


 
 

This soup is the perfect soup for those MANY rainy spring days. It is warm and comforting but fresh and...springy... at the same time! And BONUS! It helps use up all those greens in the fridge that may be slightly passed their "Best Before" dates.

ILIOS Wilted Lettuce Soup is the perfect recipe for that rainy spring day

Ingredients:

  • ½ stick unsalted butter

  • ½ onion (chopped)

  • 3 sprigs thyme (just the leaves)

  • 1 small potato (peeled, cut into 1-inch pieces)

  • 4 cups ILIOS chicken broth

  • 4 cups mixed wilted greens (chopped)

  • 1½ cup ILIOS frozen peas, thawed

  • salt & pepper (to taste)


Recipe:

  1. Melt butter in pot over medium heat.

  2. Cook onion and thyme first, stirring often for about 5 minutes.

  3. Add potato and stir for an additional 3 minutes.

  4. Add broth and bring to a boil. Cook for another 10 minutes.

  5. Stir in greens and peas, remove from heat, and let sit for about 10 minutes.

  6. Purée soup in a blender until smooth. Season with salt and pepper.

  7. Serve with crème fraîche and chopped herbs (chives, tarragon, mint, parsley)
