ILIOS Chickpea & Rapini Mashed Potatoes by Riri's Recipes

Ingredients:

  • 5 medium-large yellow potatoes, peeled and diced 

  • 2 tbsp butter

  • 1 can chickpeas, rinsed & drained (540 ml)

  • ¾ cup ILIOS friarielli in oil (rapini)

  • 3-4 tbsp ILIOS olive oil

  • Salt and pepper, to taste


Recipe:

  1. Bring a medium-sized pot of salted water to a boil. Add the diced potatoes and cook for about 20 minutes, or until fork-tender. Drain and set aside.

  2. In a large pan, heat a drizzle of ILIOS olive oil over medium heat.

  3. Add the cooked potatoes and butter to the pan, then begin mashing until combined. Keep some chunks for added texture.

  4. Stir in the chickpeas and ILIOS friarielli, along with a little more olive oil. Season with salt and pepper to taste.

  5. Remove from heat and serve warm. Enjoy!
