I don't know about you but when we make pasta, we MAKE PASTA!
When we make pasta, there is enough leftover to feed an extended Italian family. Maybe it's because if we're going to go through all the trouble to make a good tomato sauce, we may as well make a big pot of it. Maybe it's because one pack of pasta never seems like enough and we don't want to leave the second pack open in the pantry, so why not cook it all?
Whatever the reason, we came up with a great way to re-use some of that leftover spaghetti and meatballs to make sure nothing goes to waste. Meet the ULTIMATE comfort food - Pasta Bread!
DISCLAIMER: This is NOT the recipe for you if you're trying to avoid carbs! Mmmmmm carbs...
1/2 tsp. of ILIOS Extra Virgin Olive Oil
1/2 tsp. of cornmeal
1 ball of pre-made pizza dough (thawed if previously frozen)
1 1/2 cups of cooked ILIOS Organic Spaghetti
1/4 cup of spaghetti sauce
6 cooked meatballs (chopped)
1/2 cup of shredded mozzarella
2 tbsp. of melted butter
1/2 tsp. of garlic salt
Preheat the oven to 350°F. Cover a baking sheet with aluminum foil, lightly grease with ILIOS olive oil and lightly sprinkle with cornmeal.
Roll out pizza dough on a floured surface into a 9"x12" rectangle
Mix ILIOS cooked spaghetti with tomato sauce and spread down the center of the rectangle, leaving about 1" clear at the top, bottom and sides.
Add meatballs pieces down the middle and sprinkle spaghetti and meatball filling with mozzarella cheese.
Starting at the long edge, roll the dough over the filling. Pinch the ends and the seam closed.
Put roll on baking sheet and bake in oven until crust is brown and filling is hot. (about 20-25 minutes).
Brush roll with melted butter and sprinkle with garlic salt.
Slice and enjoy!
